    I would substitute 1/4 cup psyllium husk powder for the xanthan gum and do a test batch to see how it turns out. You may need to adjust the amount down depending on texture. Psyllium husk powder, especially in large amounts like that, can also cause problems in those with food sensitivities and certain health issues.
